I’m not a vegan but I’m committed to trying to find new and interesting ways to produce healthier food and vegetables are one of the best places to start! It’s a win for me if I can produce a menu that is predominantly plant based that my meat eating, process food loving family and friends will eat without batting an eyelid. The meat or fish portion of the meal becomes the support act rather than the star but let’s keep that to ourselves or they may start moaning – ‘stealth health’ in action 🙂
